This is my husbands favorite cookie, I made it many times while he was in Iraq.

Be REALLY careful on the cooking time. Ovens vary greatly, they should just have a smidge of color to the edges.

Ingredients

1 c
butter
1 1/2 c
white sugar
2
eggs
2 tsp
vanilla extract
2 1/2 c
all-purpose flour
1 tsp
baking soda
1 tsp
salt
12 oz
white chocolate, chopped
10 oz
jar macadamia nuts, chopped

Directions Step-By-Step

1
Preheat oven to 375 degrees F (190 degrees C). In a large bowl, cream together the butter and sugar. Stir in the egg and vanilla.
2
In a separate bowl, combine the flour, baking soda and salt, stir into the creamed mixture. Finally, stir in the white chocolate and nuts. Chill for about 1 hour in the refrigerator. Drop cookies by heaping teaspoonfuls onto an ungreased cookie sheet, about 2 inches apart.
3
Bake for 8 to 10 minutes in the preheated oven, until lightly browned. Cool on wire racks. When cool, store in an airtight container.

Have been wanting to make some White Chocolate Macadamia Nut Cookies so I went into JAP specifically to find a recipe for them...and yours was one of them. Since I have made one of your blue ribbon recipes before and loved it, I thought I'd print yours up and make them. Thanks for posting this recipe, Brandi. 3/17/13
