Ingredients
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 1/2 teaspoons baking soda
- 1 pinch salt
- 2 sticks butter, unsalted, room temperature
- 1 cup peanut butter, creamy
- 1 cup sugar
- 1 cup light brown sugar, firmly packed
- 2 x large eggs
- 50 - 55 mini peanut butter cups, unwrapped
How To Make what's up buttercup cookies

Step 1In a bowl, whisk flour, powder, soda & salt. In a stand mixer with paddle on medium speed, beat butter, peanut butter & sugars, 3 minutes. Beat in eggs, then flour mixture. Cover & chill for at least 2 hours.

Step 2Preheat oven to 350 degrees F. Line 2 large baking sheets with parchment paper or silpat liner. Roll 1 tbsp of dough into a ball. Place on a baking sheet. Use a fork to flatten in a crisscross pattern. Repeat with remaining dough until both sheets are filled. Make an indentation with your thumb in center of each cookie. Keep remaining dough chilled between batches.

Step 3Bake 13 - 18 minutes or unil edges begin to brown. Press a peanut butter cup, top side down, into each indentation. Let cool on sheets on wire racks for 5 minutes; remove to racks to cool completely. Repeat with remaining dough & peanut butter cups.
