Ugly Cherry Oatmeal No Bake Cookies

Ingredients
| 1 c | *dried cherries, slighty chopped |
| 1 1/2 c | water |
| 1/2 c | butter |
| 1/2 c | milk |
| 1 c | brown sugar |
| 1 c | sugar |
| 1/2 c | peanut butter, smooth works best |
| 1 tsp | vanilla |
| 1 pinch | salt |
| 2 1/2 c | oatmeal, quick kind works best |
| 1 - 1 1/2 c | coconut |

Directions
In a 2 c glass measuring cup or a small glass bowl, add cherries and water, microwave 3 minutes. Allow to stand in water 15 minutes. Drain and set aside.
While waiting 15 minutes, line your counter top with wax paper and get your other ingredients ready to go.In a large saucepan, over medium heat add butter, milk and sugars. Stir almost constantly until mixture begins to boil. Once it comes to boil, (do not allow to come to a rolling boil) remove from heat, stir in peanut butter, vanilla, salt, oatmeal, coconut and cherries until well combined.Using a medium to large cookie scoop, or a couple tablespoons, drop cookies onto wax paper.
Allow to set up then enjoy! :o)***I find it easier to chop the cherries after they are hydrated, but you may prefer it before.

Well next time you make them, roll them in balls instead and put them in little mini muffin liners. They'd be cute as heck that way and that way you won't think they're 'ugly' and you can take some dang cute pictures that way. Especially if you buy some darker color muffin liners. Just an idea since you're selling yourself short!

Thanks Annette! I have actually put the "original no bake cookies" in little papers before, didn't even think of it with these! I'll have to try to remember that next time, so I can get a better pic! :o)
