Ingredients For toasted coconut cookies

1/2 cbutter, softened

1/2 cshortening

3/4 csugar

3/4 cpacked brown sugar

2eggs

2 tspvanilla

2 call purpose flour

1 tspbaking powder

1 tspbaking soda

3/4 tspsalt

1 1/2 cquick cooking oats

1 1/2 cflaked coconut, toasted

3/4 cchopped walnuts, toasted
How To Make toasted coconut cookies

1In a bowl, cream butter, shortening, and sugars until fluffy. Add eggs and vanilla; beat well. Combine flour, baking powder, baking soda, and salt; gradually add to creamed mixture. Fold in oats, coconut, and nuts.

2Drop by tablespoonfuls onto greased baking sheets. Bake at 375F for 10-11 minutes or until golden brown. Cool 2-3 minutes before removing to a wire rack.
