Ingredients For thin mint cookie sandwiches

  • 1 pkg
    semi-sweet baking chocolate (8 squares)
  • 1/4 tsp
    peppermint extract
  • 1 sleeve
    ritz crackers (about 36)
  • peanut butter, creamy
  • pretzels

How To Make thin mint cookie sandwiches

    On a baking sheet, line with crackers. Spread a thin layer of peanut butter on one side of each cracker, about 1 tsp. Top with pretzel twist; then top with another peanut butter spread cracker. Freeze 15 - 30 minutes or until firm.

    In a saucepan, melt chocolate & extract; mix well.

    Dip frozen cookies into chocolate mixture, letting excess drip off. Place on waxed paper lined baking sheet. Refrigerate 1 hour or until firm.

    Store in airtight container.
