Ingredients For thin mint cookie sandwiches

1 pkgsemi-sweet baking chocolate (8 squares)

1/4 tsppeppermint extract

1 sleeveritz crackers (about 36)

peanut butter, creamy

pretzels
How To Make thin mint cookie sandwiches

1On a baking sheet, line with crackers. Spread a thin layer of peanut butter on one side of each cracker, about 1 tsp. Top with pretzel twist; then top with another peanut butter spread cracker. Freeze 15 - 30 minutes or until firm.

2In a saucepan, melt chocolate & extract; mix well.

3Dip frozen cookies into chocolate mixture, letting excess drip off. Place on waxed paper lined baking sheet. Refrigerate 1 hour or until firm.

4Store in airtight container.
