The Ideal Oatmeal Cookie

I can't remember where I got this recipe, but I love it. It is great with walnuts, currants, craisins, raisins, chocolate chips, white chocolate chips, etc. It IS a winner. My kids like oatmeal for breakfast, but they hate it when I put oatmeal in anything else. They love these cookies, much to their surprise!

1 1/2 c
butter, softened-but not too soft
2 1/2 c
dark brown sugar, packed
2/3 c
3 tsp
pure vanilla extract-i use mexican or madagascar bourbon
1 tsp
zest of orange peel
2 c
1 tsp
baking soda
1 tsp
1/2 tsp
3 c
quick cooking oats or old fashioned oats
2 c
raisins, dates, currants, craisins, white chocolate chips, chocolate chips, etc.
2 c
chopped nuts, walnuts or pecans


1Cream together the shortening with the sugar. Add vanilla extract and egg. Beat at medium speedd until combined.

2In a separate bowl, Sift or whisk very well. Add the next 4 ingredients. Mix into the creamed mixture, then stir in the oats, raisins or chips, nuts, etc. (whatever, if anything, you choose.)

3Place 1 or 2 inch balls, 2 inches apart on sheets sprayed with vegetable spray. Flatten gently with palm of your hand. Bake at 375 degrees for 10-12 minutes. Cool 2 minutes on cookie sheets before removing to wire racks to cool completely. Yield: 4 dozen.
