I can't remember where I got this recipe, but I love it. It is great with walnuts, currants, craisins, raisins, chocolate chips, white chocolate chips, etc. It IS a winner. My kids like oatmeal for breakfast, but they hate it when I put oatmeal in anything else. They love these cookies, much to their surprise!
Cream together the shortening with the sugar. Add vanilla extract and egg. Beat at medium speedd until combined.
In a separate bowl, Sift or whisk very well. Add the next 4 ingredients. Mix into the creamed mixture, then stir in the oats, raisins or chips, nuts, etc. (whatever, if anything, you choose.)
Place 1 or 2 inch balls, 2 inches apart on sheets sprayed with vegetable spray. Flatten gently with palm of your hand. Bake at 375 degrees for 10-12 minutes. Cool 2 minutes on cookie sheets before removing to wire racks to cool completely. Yield: 4 dozen.
