I LOVE tart lemon bars and a lot of recipes I've run into are rather....tamed down for my taste. I followed a generic lemon bar recipe and tweaked it up a notch or two in the lemon department.

Ingredients

2 1/4 cups all-purpose flour
1/2 cup confectioners' sugar
1 cup butter, softened
5 eggs
1 cup white sugar
3/4 cup of lemon juice
1 tablespoon lemon zest
1 teaspoon lemon extract

Directions Step-By-Step

Preheat oven to 350 degrees F (175 degrees C).

Mix 2 cups of flour and confectioner's sugar together. Cut in the butter or margarine. Mix well until the dough resembles pie dough consistency. Press the dough into a 9x13 inch baking pan.

Bake 15 minutes or until golden brown.

Beat together eggs, sugar, 4 tablespoons flour, lemon juice and lemon rind for at least 1 minute. Pour the mixture over the baked crust.

Bake the bars another 20 minutes, or until the lemon topping has set. Sprinkle with confectioner's sugar when cooled.

Thanks Brandi - I'll just make two separate pans. Since these will be for a tea I would not want them to overpower their taste buds. I know I'm gonna love them!

I've never doubled the recipe before. I always worry that the curd mixture won't firm up correctly when I do it. I would just make 2 separate pans, which if cut right would equal 4 dozen, smaller bars. They are powerful and many can't handle a large square.

I want to make these lemon bars for a Grandmother's Tea being held on Sunday. I need more than 24 servings - I need 4 dozen! Can I just double the recipe and be safe??

Crisp Lemon Cookies Recipe
It's more like a shortbread, and I would not do the white chocolate drizzle. Use lemon extract instead of vanilla (increase it by 1/2 teaspoon at least), use more lemon zest then directed.
