This is another option for those who cannot eat chocolate. Carob is dark and rich, and sweet. It looks like cocoa, but does not really taste like chocolate, in my opinion. However, carob is good in its own right and these have a very pleasant flavor. These are made very similar to my Butterscotch Brownies. You can normally find carob powder in the baking section of major supermarkets and health food stores.

Ingredients For susan's carob bars

  • 1/4 c
    butter
  • 1 cup
    sugar or brown sugar
  • 1
    egg
  • 1 tsp
    vanilla
  • 1/2 c
    all purpose flour
  • 3-4 Tbsp
    carob powder
  • 1 tsp
    baking powder
  • 1/2 tsp
    salt
  • 1/2 c
    chopped pecans

How To Make susan's carob bars

    Melt butter and stir together with sugar until blended. Beat in the egg and vanilla.

    Sift together the flour, carob powder, baking powder, and salt. Stir the flour mixture into the sugar mixture. Add in the chopped nuts.

    Spread in a greased 9x9-inch pan, and bake at 350 degrees about 20-25 minutes. Cut into bars after cooling.
