Directions
1. Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
2. In a large bowl, stir together the cake mix and pumpkin until well blended. Drop by rounded spoonfuls onto the prepared cookie sheet.
3. Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

I love this recipe, except that I add one 12 oz. pkg. of the cinnamon chips and put the batter into the miniature muffin tins and bake at 350 degrees for 12-15 minutes or until a cake tester inserted into the center of the muffin comes out clean. They are a favorite, and no frosting is needed. You can dust with powdered sugar, if desired.

Just made these cookies, which I call Muffkies. I threw in some mini choc chips and dusted with powdered sugar. Very light and such a wonderful fall taste. The EASIEST muffkies ever! I wonder what other cake mix might go well with this.

I've been trying to find a pumpkin cookie recipe that I could use as a sandwich type cookie. This recipe makes a fantastic fluffy cake like cookie which is rich in pumpkin and just the right amount of spice. Although this wasn't the consistency that I was looking for the cookie was very easy to deal with and very good to eat.

Janet, I do this with chocolate devils food mix and the canned pumpkin to make the best low fat chocolate cupcakes.. Cuts the fat and the calories and they always come out moist.

Got this recipe a couple of years ago, but have moved a few times & lost it. They are so good & you can also put the batter in muffin tins & bake them.

I was wondering if ya made the cake mix to its directions before ya add the pumpkin to it, or just use the dry cake mix and add the pumpkin?

Making them right now with caramel bits and chopped glazed pecans. Doing half as cookies and half as mini-muffins. Will be a nice Halloween treat for my co-workers.
