This is the best molasses cookie I have ever had. The coffee and mustard sound like strange ingredients, but make a world of difference in the flavor of the cookies. The extra spices are the way I like them. Plain or glazed, they are wonderful. This recipe makes alot but they never last long in our house.

Ingredients For soft & yummy molasses cookies

  • 1 c
    butter, softened
  • 1 c
    granulated sugar
  • 1 c
    dark molasses
  • 1
    large egg
  • 3/4 c
    milk
  • 4 - 3/4 c
    unbleached white flour
  • 3 tsp
    baking soda
  • 1 tsp
    salt
  • 2 tsp
    cinnamon, ground
  • 2 tsp
    ginger, ground
  • 1 tsp
    dry mustard
  • 1 tsp
    clove, ground
  • 1 tsp
    instant coffee powder

    Preheat oven to 350 degrees. Prepare cookie sheeets with parchment paper. In lerge mixing bowl, cream butter & sugar until fluffy. Beat in egg and molasses. Sift dry ingredients together. Add milk and dry ingredients alternately,scraping sides of bowl often. Mix until all blended together. Scoop with cookie scoop or drop by spoonfulls onto cookie sheet 2" apart, try to keep the dough balls rounded. Bake for 9-10 minutes until domed and set.. cool for 10 minutes on cookie sheet and finish cooling on wire rack. serve plain or with glaze.

    Glaze: 2 cups powdered sugar (Preferably C & H brand) 1 tbl softened butter, dash of salt, splash of vanilla, and evaporated milk. Whisk all ingredients together till smooth, adding enough milk to make icing thin enough to glaze cookies or drizzle over tops. I really like them this way.
