Ingredients For s'more cookie bars

  • 15 lg
    marshmallows, cut in 1/2, divided
  • 2 stick
    butter, room temperature
  • 1 c
    light brown sugar, firmly packed
  • 1/2 c
    sugar
  • 1 x lg
    egg
  • 1 Tbsp
    pure vanilla extract
  • 2 c
    all purpose flour
  • 1/2 tsp
    baking soda
  • 9 sheets
    graham crackers, divided
  • 11 - 1.55 oz
    hersheys chocolate bars, broke into pieces, reserve 1 bar for melting
  • 1 Tbsp
    canola oil

How To Make s'more cookie bars

    Preheat oven to 350 degrees F. & line a large 10" x 14" cookie sheet with parchment paper or silpat liner & a 9" x 13" cookie/jelly roll pan with aluminum foil & spray with cooking spray.

    On the cookie sheet with parchment paper or silpat, place 10 of the 15 marshmallows any way on the cookie sheet & place in the oven. Bake for around 10 minutes, until marshmallows start to puff up & get golden brown. Don't leave in too long, otherwise they will burn on the bottom.

    While marshmallows are toasting, cream butter & sugars on high in a stand mixer, until light & fluffy. Add egg & vanilla & mix well or until combined.

    In a medium bowl, combine flour & baking soda & slowly add to butter mixture, mix to combine.

    In a food processor, place the graham crackers & pulse 3 - 4 x to break into smaller pieces.

    Once the marshmallows are toasted, carefully remove from oven & scrape into batter using a spatula & mix to combine.

    Add the graham crackers to the batter, reserving some to sprinkle on top of the dough. Add the chocolate pieces, minus the 1/4 C reserved.

    Press the dough into the 9" x 13" pan with the foil & spray & press down using a spatula to evenly spread out among the pan.

    Sprinkle remaining graham cracker pieces & bake for 20 - 25 minutes or until golden brown.

    With 5 - 10 minutes left, add remaining marshmallows to top of batter, cut up, keeping in oven if possible & allow to finish baking until golden & marshmallows toasted.

    Let cool on counter & melt remaining chocolate with the oil in microwave in 30 second batches & stir to melt. Drizzle over top of cookie bars & allow to set.
