I got this recipe from my younger sister. She calls them Angel Cookies. The filling will be very hot so use caution when rolling. I love them because they are sweet, chewy and crispy.

Ingredients For skillet date cookies

  • 8-10 oz
    dates, chopped
  • 1 c
    sugar
  • 1/2 c
    butter
  • 1 tsp
    vanilla extract
  • 2 c
    rice krispies
  • 1/2 c
    pecans, chopped
  • 1 c
    coconut, flaked
  • NOTE: MAY DECREASE RICE KRISPIES BY 1/4 -1/2 CUP TO BE ABLE TO FORM BALLS BETTER WITHOUT THEM GETTING TOO DRY. ALSO SOME PEOPLE USE AN EGG IN THEIR RECIPE, THIS ONE DOES NOT CALL FOR AN EGG BUT YOU MAY ADD ONE IF YOU LIKE.

How To Make skillet date cookies

    Melt butter in large heavy skillet. Add chopped dates and sugar. Cook over low heat, stirring frequently for about 4-5 minutes, until thick and bubbly.

    Remove from heat; add vanilla, rice cereal and pecans.

    When just cool enough to handle, form into small balls and roll in coconut.
