My Mom used to make these when we were kids. I loved them then, and I *still* love them!! They are SO easy to make, take very little time, and are SO tasty! *Note: You can make Chocolate Scotcheroos by using Cocoa Krispies! I like the original the best though!

Ingredients For scotcheroos

  • 1 c
    light corn syrup
  • 1 c
    sugar
  • 1 c
    peanut butter
  • 6 c
    rice krispies cereal
  • 1 c
    semi-sweet chocolate chips
  • 1 c
    butterscotch chips

How To Make scotcheroos

    In a 3 qt. saucepan, combine sugar & light corn syrup. Cook over medium high heat, stirring frequently, until sugar melts and mixture starts to boil. Remove from heat, stir in peanut butter until well combined. Stir in the cereal, and stir until well coated. Press mixture into a 9 x 13 in. pan that has been coated with cooking sray. Set aside.

    In a 1 qt. saucepan, combine the semi-sweet & butterscotch chips. Heat on low, stirring constantly, until chips are melted. Spread over the cereal mixture.

    Let stand until firm. Cut into bars once cooled.
