2 sleeves of ritz crackers
1 1/2 lb mint chocolate chips chips
**note- if you can't find the mint chips use semi sweet chips with 1 tsp. of mint extract. i used that and it worked fine.

These taste very much like Girl Scout Thin Mint cookies! I made this and they are VERY good! This recipe was posted by a wonderful cook name Marky90...but the photo is mine!

Melt Chocolate Chips in microwave. (About 1 -1/2 minutes)
Stir till creamy
Dip crackers in chocolate.
Put cookies on wax paper.
Freeze till set.

Yes they are messy to make but great tasting. I've always used the semi sweet chips and have added the extract. Everyone loves them!
