Red Hot Velvet Meltaway Cookies

I thought these cookies would be a good valentine cookie for my Valentine. It's like taking Red Velvet Cake and Red Hot cinnamon candy, putting them togeather and making these cookies and not to forget the cream cheese icing that goes on the cake too, add a little valentine sparkle with Red Sugar sprinkled over the icing. This recipe was in our local newspaper . I don't know where the orginal recipe is from.

Ingredients

for the cookies
1 1/2 c
all purpose flour
1/2 c
cornstarch
1/4 tsp
salt
1/2 c
granulated sugar
1 c
(2 sticks ) unsalted butter at room temperature
1 tsp
red food coloring
1 tsp
cinnamon extract
1 tsp
ground cinnamon

FOR THE FROSTING

1/2 c
cream cheese ( 4oz. ) , room temperature
1/4 c
unsalted butter ( room temperature )
1/4 c
powdered sugar
red sugar for sprinkling to decorate tops of cookies

Directions Step-By-Step

Sift togather the flour, cornstarch,and salt into a small bowl - set aside - In a mixer Bowl , place the granulated sugar, buter, food coloring, cinnamon extract and ground cinnamon, beat just untill creamy and well combined. Then stir in the flour mixture from the small bowl, untill combined. Place the dough in the refrigerator for 1 hour, untill chilled well.

Pre-Heat the oven to 350- Line a baking sheet with parchment paper -pich off pieces of the chilled dough and roll into balls the size of a large marble,then slightly flatten the balls into a disk about a 1/4 inch thick . place cookies on the prepared cookie sheet. Bake for 10 to 12 minutes,or untill set. The cookies should not brown or Spread, the cookies will be quite fragile, cool completely on cookie sheet Before trying to remove them. They will crumble very easy and just melt in your mouth.

To Make The Frosting - Use an electric mixer to beat togeather the Cream Cheese, Powdered Sugar and Butter, untill very smooth and creamy. put frosting into a pastry bag or a zip top baggie, for baggie you will snip one coner. pipe frosting onto cookies to make a design and sprinkle with Red Sugar ( I will try to make a heart shape with frosting, fill in with frosting and sprinkle Red Sugar in the heart shape , over the frosting ) The cookies will be Red .
