I made this up over Christmas holiday when I was faced with a can of pumpkin and a cake mix to make a dessert. The results were delicious!

Ingredients For pumpkin nut bars

1 boxyellow cake mix

3eggs
-
1/2 coil
-
1/2 capplesauce

1 canpumpkin, 16 oz.

1 cwalnuts, chopped

1 Tbsppumpkin pie spices

1 tspvanilla
-
1/2 tsporange peel
-
1 Tbsporange juice (optional)
- CREAM CHEESE FROSTING

1 pkgcream cheese, 3 oz (softened)

2 cpowdered sugar
-
6 Tbspbutter, softened
-
1 Tbspmilk
-
1/2 tspvanilla
-
1 tsporange juice
How To Make pumpkin nut bars

1Mix all ingredients for bars until well blended.

2Pour into greased 9x13 pan.

3Bake at 350 degrees for 35 minutes.

4Remove to cooling racks until completely cool, then frost with cream cheese frosting.

5For frosting: mix well with blender until creamy (at least 3 minutes). If too thick, thin with more orange juice or milk until you get a good, spreadable consistency.
