I still find lots of my time is spent making cookies. You may be shocked to find out how many “Cookie Monsters” there are! This is a recipe I find I used quite a bit and still do.

So moist and delicious!  This recipe would be terrific for served for breakfast, afternoon tea or anytime you want a great tasting snack.

Ingredients For preserved banana bars

  • 1/2 c
    butter, softened
  • 1 c
    brown sugar
  • 10 oz
    apricot preserves
  • 2
    eggs,beaten
  • 1 tsp
    vanilla
  • 1 3/4 c
    all purpose flour
  • 1/2 tsp
    baking powder
  • 1/2 tsp
    baking soda
  • 1/4 tsp
    salt
  • 1 c
    bananas, mashed
  • 1/2 c
    nuts

How To Make preserved banana bars

  • 1
    Cream together butter and brown sugar. Add preserves,beaten eggs and vanilla.

    Combine the flour, baking powder, baking soda and salt together in a separate bowl and add to the creamed mixture. Add the mashed bananas and stir well. Then add the nuts and stir well.

    Pour into a greased and floured 13”x9” pan. Bake at 350F for 35-40 minutes. Cool, cut into bars and enjoy!

    I sometimes glazed them with a vanilla frosting, drizzled after cooling.
