Grandma made these every year at Christmas, although we begged for them all year round. Now it's my childrens turn to ask, at least twice a month for them.
- 1/2 lb
- cream cheese (softened)
- 1/2 lb
- butter (softened)
- 2 c
- all purpose flour
- egg yolk
- 1 tsp
- lemon juice
- lekvar (prune butter)
- preserves (your favorite)
- confectioners' sugar
1Cream together cream cheese, butter and egg yolk.
2Knead in flour 1/2 cup at a time. Add lemon juice. Continue until rolling consistency.
3Flour flat surface. I pull dough apart into softball size pieces(makes it easier to handle). Roll out to approximately 1/4 in thickness. Use either round cookie cutter or round drinking glass to cut out cookies.
4In the center of each cookie drop a tablespoon of preserves or lekvar. Fold cookie and press edges with fork.
5Bake at 350 degrees for 8-10 minutes on an ungreased cookie sheet.
6Cool and sprinkle with powdered sugar.
