1In a food processor pulse together the first three ingredients and spread in an edged 8 by 8 by 2 inch baking pan lined with foil. (over the edges with the foil!) Preheat the oven to 350 degrees,bake for eight minutes,let it cool.
2Meanwhile in a bowl combine the butter,milk and peppermint extract mixing it well then spread it over the cookie crust.
3In your microwave on high,melt the chocolate and shortening for one minute,stirring once,let it cool for fifteen minutes,spread over the cookie crust. Refrigerate for fifteen,twenty minutes.
4Using a 1-1/2 inch cookie cutter and a can of anything out of your cupboard for leverage,cut the cookies and plate them for serving.you can garnish the plate with candy chocolate mints or fresh mint leaves if you wish,enjoy!! :)
