Ingredients For peanut meringues

  • 4 lg
    egg whites
  • 1/4 tsp
    cream of tartar
  • 1/4 tsp
    pure vanilla extract
  • 1/8 tsp
    salt
  • 1 c
    sugar
  • 1/2 c
    roasted peanuts, finely chopped
  • ice cream of choice, if using

How To Make peanut meringues

    Preheat oven to 250 degrees F.

    In a large bowl, beat egg whites, cream of tartar, vanilla & salt on medium speed until soft peaks form. Gradually beat in sugar, 1 tablespoon at a time, on high until stiff peaks form. Fold in peanuts.

    Drop eight mounds onto a parchment paper-lined baking sheet. Shape into 3" cups with the back of a spoon. Bake for 1 hour or until set & dry. Turn oven off; leave meringues in oven for 1 hour. To serve fill meringues with ice cream. (Or make cookies out of them)
