  • FOR PEANUT BUTTER COOKIE CRUST
  • 4 Tbsp
    unsalted butter, softened
  • 1/4 tsp
    vanilla extract
  • 1/2 c
    plus 2 tablespoons of all-purpose flour
  • 1/2 tsp
    baking soda
  • 1/4 c
    smooth peanut butter
  • 1/4 c
    granulated sugar
  • 1/4 c
    brown sugar
  • 1
    egg
  • pinch
    salt
  • FILLING
  • 1 1/2 c
    semi-sweet chocolate chips
  • 1 c
    caramel bits
  • PEANUT BUTTER CREAM
  • 2 Tbsp
    butter,softened
  • 1/4 c
    + 1 tablespoon of peanut butter
  • 3/4 c
    powdered sugar
  • 1 Tbsp
    milk
  • 2 c
    caramel popcorn

How To Make peanut butter caramel popcorn bars

    Preheat Oven to 350 Degrees Fahrenheit. Line an 8x8" pan with aluminum foil and spray the foil with nonstick spray or butter. In a small bowl mix the flour, baking soda and salt. Set aside. Using the bowl of a mixer, cream the butter and sugars together for 3-4 minutes until creamy. Scrape the sides of the bowl down with a spatula. Add the egg, vanilla and peanut butter. Keep mixing on medium speed until combined.

    Place this entire mixture on the 8x8 pan. With a spatula press down until the dough is completely flat and covers the entire surface. Bake for 15-18 minutes or until the top starts to brown. Remove mixture from oven and immediately sprinkle the caramel bits and chocolate chips on top. Wait 1-2 minutes for the chocolate to start melting, then spread with a spatula until the chocolate covers the entire surface. Let this mixture cool completely.
