Ingredients For peanut butter brickle cookies

  • 3 1/2 c
    all purpose flour
  • 2 c
    old-fashioned oats
  • 1 tsp
    baking soda
  • 1 tsp
    salt
  • 2 c
    butter, unsalted, chilled, cut up
  • 1 1/2 c
    light brown sugar, packed
  • 1 c
    peanut butter, creamy
  • 4 tsp
    pure vanilla extract
  • 2 lg
    eggs
  • 3 c
    honey roasted peanuts
  • 2 - 10 oz. pkg
    peanut butter chips
  • 2 - 8 oz. pkg
    toffee bits or 12 - 1.4 oz. heath bars, chopped

How To Make peanut butter brickle cookies

    Whisk flour, oats, soda & salt in medium bowl.

    Beat butter & brown sugar in a large bowl at medium speed 3 minutes or until light & fluffy. Beat in peanut butter & vanilla. Add eggs one at a time, beating just until combined. Stir in peanuts, chips & tiffee bits. Cover & refrigerate 2 - 3 hours or overnight, until firm enough to shape.

    Preheat oven to 375 degrees F. Drop 1/4 C dough per cookie onto parchment paper lined baking sheets. Gently form into balls; flatten slightly to 1" thickness. Freeze dough on baking sheets 10 minutes or until firm.

    Bake 10 - 12 minutes or until light brown on edges. Cool on baking sheet on wire rack 3 minutes. Place cookies on rack; cool completely. Enjoy!
