Oatmeal scotchies are a favorite cooking in our house. So is oatmeal scotchie ice cream made at a local ice cream parlor that makes nothing but homemade ice cream. Cookies and cream is also on the top of our list as well as anything Oreo related. So I decided to combine the best of both worlds and came up with this recipe. The combination of butterscotch chips and Oreo's make these cookies divine. They are sweet and they are rich. You'll only need to eat one, but I bet you'll want at least two. The recipe and pictures are my own.

Ingredients For oreo scotchies-annette's

  • 2/3 pkg
    oreo's (24 cookies)
  • 11 oz
    butterscotch chips
  • 2 stick
    butter, softened
  • 2 lg
    eggs
  • 2 1/2 c
    all purpose flour
  • 3/4 c
    sugar
  • 3/4 c
    brown sugar
  • 2 tsp
    vanilla extract
  • 1 tsp
    baking powder
  • 1 tsp
    salt

How To Make oreo scotchies-annette's

    Preheat oven to 350°. Cream together butter, sugar and brown sugar with mixer. Add eggs and vanilla, mix to combine.

    In a separate bowl combine flour, salt and baking powder, mix to combine.

    Slowly add dry ingredients to wet ingredients.

    Put Oreo's in a Ziplock bag and crush with your fingers. Leave them semi chunky so there are chunks in your cookies.

    Fold butterscotch chips and Oreo's into the dough just enough to incorporate.

    Drop by tablespoons full onto a cookie sheet. Bake at 350° for 10 minutes. Cookies will look and feel soft.

    Remove from oven and leave on cookie sheet for 3 minutes then transfer to a cooling rack to completely cool before placing them in an airtight container. Enjoy! ***Oh, don't forget to eat one or two!*** :o)
