Orange "Zookies"

These zesty little cookies (hence the name) are perfect for dessert or an after school snack. After they've cooled, place vanilla ice cream in between two and make a sandwich. I won't tell :)

Ingredients

2 1/4 c
all-purpose flour
3/4 tsp
baking soda
pinch of salt
1 c
butter, softened
1/2 c
granulated sugar
1/2 c
brown sugar (packed)
1
egg
1/2 tsp
pure orange extract
1 tsp
vanilla
zest of 2 medium oranges (~ 1 tbsp)

Step-By-Step

1Pre-heat oven to 350 degrees.
2Sift flour, baking soda and salt in a medium bowl. Set aside.
3Cream butter and sugars in the stand of an electric mixer or beat by hand. Once creamy, beat in egg and extracts.
4Working in batches, add the flour mixture to wet mixture, scraping down sides of bowl if needed. Once all the flour has been fully incorporated, fold in orange zest.
5Bake for 10 minutes until cookies are just barely done (they are best slightly underbaked).
