Old-Fashioned Pumpkin Cookies

all purpose flour
CREAM CHEESE FROSTING
butter, unsalted, room temp.
cream cheese, room temperature
confectioners' sugar, sifted
light cream, opt.
IN A MEDIUM BOWL, CREAM BUTTER AND CREAM CHEESE TOGETHER. SLOWLY ADD POWDERED SUGAR AND MIX WITH AN ELECTRIC MIXER UNTIL THICK AND CREAMY, ADD VANILLA. ADD ENOUGH LIGHT CREAM FOR SPREADING CONSISTENCY.
Preheat oven to 350° F. Grease baking sheets or line with parchment paper.
In a medium mixing bowl, combine, sifting together flour, baking soda, baking powder, cinnamon, nutmeg and salt.
Beat sugar and butter in large mixer bowl until well blended. Beat in pumpkin, egg and vanilla extract until smooth.
Gradually beat in flour mixture.
Drop by rounded tablespoon onto prepared baking sheets.
Bake for 15 to 18 minutes, or until the edges are firm.
Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.
When cookies are cooled, frost cookies using an offset spatula.
