I had a butter yellow cake mix I needed to use and a small amount of oats taking up space in my pantry. So, I decided to make these oatmeal cookies. They turned out wonderful. I'm going to freeze them for when I need a quick treat for a pot luck or as a sweet snack. They're mighty tasty and I would imagine they'd be good with just a yellow cake or even a white cake mix.Enjoy!

Ingredients

1 - 15.25 oz
betty crocker supreme butter recipe yellow cake mix
1 1/2 c
old fashioned oats
3/4 c
flour
2 tsp
cinnamon
1/2 c
packed brown sugar
2
eggs
1 c
butter, melted
1 tsp
vanilla
1 c
raisins
1/2 c
each - chopped walnuts and chopped pecans

Directions Step-By-Step

Preheat oven to 375 degree F.

In a bowl, mix together the cake mix, oats, flour and cinnamon. Set aside.

Measure our 1 cup of raisins and pour hot water over them and let set while mixing batter. Drain well.

In another bowl, whisk together the eggs, brown sugar and pour into the cake mixture. Pour in the melted butter and stir until thoroughly blended.

Stir in the raisins and nuts.

Spray baking sheet with bakers joy or grease and drop batter by tablespoonfuls on prepared sheet, about 2 inches apart.
Bake for 12 - 15 minutes or until golden on the bottom. I always take mine out before too dark.

Finish cooling on racks.Enjoy!
