Ingredients For oatmeal date bars

  • 2 - 18 oz pkg
    refrigerated oatmeal raisin cookie dough, room temperture
  • 2 1/2 c
    old fashioned oats, uncooked, divided
  • 2 - 8 oz pkg
    dates, chopped
  • 1 c
    water
  • 1/2 c
    sugar
  • 1 tsp
    pure vanilla extract

How To Make oatmeal date bars

    Preheat oven to 350 degrees F. Lightly grease 13" x 9" baking pan.

    Combine 3/4 of one package of dough & 1 C oats in medium bowl; beat until well combined. Set aside.

    Combine remaining packages of dough & remaining oats in a large bowl. Beat with electric mixer at medium speed until well combined. Press dough evenly onto bottom of prepared pan. Bake 10 minutes.

    Meanwhile, combine dates, water & sugar in medium saucepan; bring to a boil over high heat. Boil 3 minutes; remove from heat & stir in vanilla. Spread date mixture evenly over partially baked crust; sprinkle evenly with reserved oats mixture.

    Bake 25 - 28 minutes or until bubbly. Cool completely in pan on wire rack.
