Oatmeal Craisin Cookies

This is my all-time favorite cookie recipe! I've been posting several of my Christmas cookie recipes. One of the ones I used to make were oatmeal cookies, but I have since married and hubby's family recipe for oatmeal cookies is MUCH better than mine. They are fluffy and cake-like, a little chewy...just the way I love them! So, I'm posting his recipe, along with my tweak that has made it become my all-time fave...CRAISINS! If you haven't had an oatmeal cookie with craisins and walnuts, you haven't lived! While he was making these one time for my aunt who loves raisins (and I don't!), I took part of the batter and threw in some craisins and walnuts cuz it sounded good. Oh my word! Just like that heaven was born...I'm sure I heard angels sing. They are THAT good! Hope you try them and enjoy! They can be made plain or with raisins or craisins and/or nuts, and adjusted amounts to your liking. I love this recipe!

Ingredients

1 c
sugar
1/2 c
shortening
2
eegs
1/4 c
milk
1 2/3 c
oats, (the one-minute ones)
1 1/2 c
flour
1 tsp
baking soda
1 tsp
cinnamon
1/2 tsp
salt
1 c
craisins
1/2 c
chopped walnuts

Directions Step-By-Step

Cream sugar and shortening. Beat eggs with milk in seperate bowl, then add to creamed mixture and mix well. Mix dry ingredients in seperate bowl. Add to creamed mixture and mix well. Add oats and mix well. Add craisins and nuts and mix again. Drop by spoonfuls onto non-stick baking sheet. Bake at 375 degrees for 10-12 minutes.
