Ingredients For oatmeal craisin cookies

  • 1 1/2 c
    all-purpose flour
  • 2 1/2 c
    oats, uncooked
  • 1 tsp
    baking soda
  • dash
    salt
  • 2 tsp
    ground cinnamon
  • 1 c
    craisins
  • 1 stick
    butter, softened
  • 1/2 c
    shortening
  • 1 c
    brown sugar, packed
  • 1 c
    sugar
  • 3.4 oz
    cheesecake instant pudding mix
  • 1/2 Tbsp
    imitation vanilla
  • 2 lg
    eggs
  • 1 c
    walnuts, coarsely chopped

How To Make oatmeal craisin cookies

    Preheat oven to 350 degrees. Line cookie sheets with parchment paper. In large bowl, combine flour, oats, soda, salt and cinnamon; set aside. Place Craisins in small bowl and cover with boiling water for about 10 minutes to soften; drain.

    In large mixing bowl, combine butter, shortening, sugars, pudding mix and vanilla beat until creamy. Add eggs and mix well. Gradually, add dry ingredients. Add drained Craisins and walnuts.

    Use a cookie scoop or drop by rounded tablespoons. Flatten slightly with fork. Bake 9-10 minutes or until lightly browned. Cool on cookie sheets for 1 minute. Remove and cool completely on wire racks. Makes 4 dozen.
