I've been trying to find a good Oatmeak Raisin recipe for years, and I pretty much made up my own. Tested on my friends and family and got a thumbs up... Soaking the raisins really brings out the flavors
SOAK RAISINS FIRST... BEAT EGGS AND VANILLA TOGETHER AND THEN ADD RAISINS, STIR. SOAK FOR 45 MINUTES TO 1 HOUR STIRRING OCCASIONALLY.
Preheat oven to 350 degrees
Cream butter and sugars with mixer. In a seperate bowl, combine flour, salt, baking soda, cinnamon, ginger and nutmeg. Stir the dry ingredients until well blended. Add dry ingredients to creamed mixture and mix well.
Now, add in the eggs and raisind mixture, and add in the oatmeal.
Form into balls on cookie sheet. Bake for 10 minutes. Let cool for 5-10 minutes or until firm enough to transfer to a wire rack.
