Ingredients

1 c oat flour(you can grind oats in blender or food processor to make your own)
1/2 c brown sugar(i use sucanat)
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 c plain yogurt
2 Tbsp coconut oil, light olive oil or grapeseed oil
1 egg
1 tsp vanilla
1 2/3 c regular oats
1 c chocolate chips(or raisins, nuts or combination)

cindy's Notes:

If you want gluten-free cookies, use GF oats. These are REALLY good and no one would ever know they were wheat free, 100% whole grain and lower in sugar than most cookies.

 

Directions

Preheat oven to 350F. Grease a cookie sheet or line with parchment paper or silicone mat.

Combine flour, sugar, baking powder, baking soda and salt and whisk well.

Add the yogurt, oil and egg and blend. Stir in the oats and chocolate chips.

Drop onto cookie sheets and bake for 8 or nine minutes. Don't over bake...the centers should still look slightly soft.

Hi Cindy, these are nearly like my GF cookies for breakfast,but will use yours next time I make oatmeal cookies. This way I have my chocolate chip and my oatmeal..all at the same time,can't beat that..LOL
And I ALWAYS USE GF OATS..

I look forward to trying these. I love oatmeal cookies and I have to start finding ways to cook w/o the wheat since I am allergic. They look delicious too!!!!

Hope you like them Margie and Kim. These are not super sweet so they would work great as a breakfast cookie, Margie. If you want them a little more dessert-like, you could always up the sugar a bit, maybe to 3/4c. Kim...oat flour is my favorite way to bake w/o wheat. It's so easy and cheap to grind up oats as opposed to buying specialty flours and in most recipes it works great without any additives such as xanthan gum, etc. I've converted most of my muffin, quick bread and some cake recipes to oat flour. I've had trouble with some cookie recipes being crumbly with the oat flour, which is why I tried the yogurt and it solved the problem beautifully!

Cindy, I cut my sugar in all my muffins, there not a desert for me,
I just can't use a whole lot of oats, even though I buy the GF. that's why I use all the other flours I use.
I am 100 % GLUTEN FREE.

I need a wheat, soy, peanuts and tomato free diet. If it is possible I should strive to do it. I have not been eating wheat the last couple of weeks and have felt so much better. No sneezing, itching or coughing either or itchy face or skin.

It causes me to have chronic pain issues...fibromyalgia-type symptoms, as well as a bloated belly. I always regret it when I fall off the wagon!

Well it could be the culprit of joint pain that I experience when eat lots of bread and such. I will be happy to find out that it relieves me of symptoms too. It is a difficult thing to rid yourself of foods that are so common. I want to purchase some type of bread called Paleo. Have you heard of it and have you tried it before?

Kim, the bread that I found that I can eat is called Udi's I have to buy at the health food as it is in the freezer.
for me I eat NO wheat,soy,peanuts.. but I can eat tomatoes, I use almond butter on my GF crackers.
Hubby is Lactose so I have fun in the kitchen...

I haven't tried Udi's yet. I usually get Ezekiel bread but it is so hearty and chewy sometimes I just want a soft piece of bread. You know what I mean? If my Grammie hadn't spent all those years when I was younger making fresh baked breads I don't think I would crave them as much. haha ---what type of crackers do you get that are GF?
