This recipe is from a magazine clipping, but the page doesn't say the name of the magazine. Oh well. Anyway, this is certainly a different recipe. I am a diabetic now, so for me, other diabetics, and anyone wanting to try a no-sugar or no-sweetener-added cookie, here it is. Only sweetened with fruit. Also, with egg replacer and butter/fat alternative, it can be vegetarian.

Ingredients For no sugar or sweetner cookies - fruit sweet

  • cooking spray
  • 2 c
    all-purpose flour or unbleached all-purpose flour
  • 1/2 c
    california walnuts, chopped
  • 1/2 c
    dark seedless raisins
  • 1/2 c
    orange juice
  • 1/2 c
    butter, softened*
  • 2 tsp
    double-acting baking powder
  • 1 tsp
    organic grated orange peel
  • 1/2 tsp
    salt
  • 1/2 tsp
    cinnamon
  • 1 lg
    egg*
  • *or alternative
  • *or egg replacer

How To Make no sugar or sweetner cookies - fruit sweet

    Preheat oven to 375°F. Grease cookie sheets or spray with cooking spray.

    In a large bowl, with wooden spoon, stir all ingredients, until well mixed. Onto prepared cookie sheets, drop dough by tablespoonsful, about 2 inches apart.

    Bake about 20 minutes, until lightly browned; remove cookies from sheets. Cool, before storing, in tightly covered container. One cookie is 80 calories. Makes about 2 1/2 dozen.
