Ingredients

DRY INGREDIENTS:

8 oz
unsweetened, small flake coconut
3/4 c
splena for baking
1/4 c
erythritol (buy online, or at health food store)
1/4 tsp
salt (optional)
4 Tbsp
soy flour

WET INGREDIENTS

egg whites, slightly beaten
1/2 tsp
almond or vanilla extract
1/2 tsp
liquid stevia (buy online or at healthfood store)
1 Tbsp
coconut oil

Directions Step-By-Step

Preheat ovent to 325 degrees.

Combne dry ingredients and whisk together. In a separate bowl, whisk eggs and add wet ingredients. Add wet & dry ingredients together and mix thoroughly. Shape into 1 inch balls, being sure they are all the same size so they bake evenly. On parchment or silpat, bake 20-25 minutes, rotating trays half-way thru cooking time. Makes about 2 1/2 dozen cookies. Yum!
