Ingredients For no bake snickerdoodle granola bars

  • 1/2 c
    butter
  • 1/2 c
    corn syrup, light
  • 1/2 c
    light brown sugar, firmly packed
  • 1/2 c
    sugar
  • 2 tsp
    pure vanilla extract
  • 1 Tbsp
    cinnamon, ground
  • 1/2 tsp
    cream of tartar
  • 1/2 tsp
    salt
  • 3 1/2 c
    old fashioned oats (not instant)
  • 3/4 c
    + up to 4 more tbsp all purpose flour
  • DRIZZLE:
  • 1/2 c
    white chocolate chips

How To Make no bake snickerdoodle granola bars

    First create a sort of caramel sauce by combining the first four ingredients. Heat on high in microwave for three minutes, stopping every one minute to stir. Make sure it does not bubble over.

    Remove bowl from microwave and stir in your next four ingredients. When fully combined, stir in the oats. Slowly stir in 3/4 C flour, making sure it gets fully incorporated. Add more flour if needed to get a good consistency, not too wet (and not too crumbly!)

    Transfer your granola bar mixture into an 8x8 baking dish that you've lined with foil and sprayed with cooking spray. (Leave a little foil overhanging the edges so that you can easily pull them out when you're ready.) Press down on the dough to get a compressed, even layer. Refrigerate for at least four hours before slicing and serving. Store in airtight container at room temp.
