STOP!!! don't pass this recipe by. lemon lover or not these bars are SO melt in your mouth you'll want to eat the whole pan. I have had this recipe for years. Everyone loves them and I hope you will to! 3 sticks of butter in these bars. what else is there to say! enjoy

Blue Ribbon Recipe

Notes from the Test Kitchen:
Ann set high expectations for these lemon bars... and they turned every bit as good as she said! Perfectly sweet and tart, these creamy bar are a perfect after-dinner or brunch treat.

Ingredients

CRUST
2 c
all purpose flour
1 c
butter softened (no substituting)
1/2 c
powdered sugar
FILLING
4
eggs (slightly beaten)
2 c
sugar
4 Tbsp
flour
6 Tbsp
lemon juice (i use bottled)
FROSTING
1/2 c
butter (softened)
1 c
powdered sugar
1 tsp
milk
2 Tbsp
cold water

Directions Step-By-Step

MIX CRUST INGRED. WITH FORK AS YOU WOULD FOR A PIE CRUST. PAT INTO A 9X13 PAN WHICH HAS BEEN GREASED AND FLOURED. BAKE AT 350 DEGREES FOR 15 MINUTES.

AS CRUST IS BAKING. MIX FILLING. AFTER CRUST HAS BAKED 15 MINUTES, POUR FILLING OVER CRUST AND CONTINUE BAKING FOR 25 MINUTES. COOL BARS COMPLETELY

MAKE FROSTING BY BEATING BUTTER,POWDERED SUGAR AND MILK FOR 6 TO 8 MINUTES ON HIGH SPEED. THEN ADD 2 TBLSP. COLD WATER ONE AT A TIME. BEAT UNTIL SMOOTH. SPREAD OVER COOLED BARS.

Thanks Julie, Gretchen and Kim for the nice comments and for backing up my recipe. There have been a few people that haven't like them and that's ok. Amanda I hope you will give them another try! :) People always ask me to bring them to parties and my family love them!

I just made these in August and they are delish. Now my lemon "LOVIN" friends thought they had the perfect amount of lemon juice. I myself, would like them just a little more tart for my taste. Like Ann said maybe some lemon juice in the icing would be just that touch of tart I would want. But they turned out fine for me too.

Made these yesterday and they are " melt-in-your-mouth" good!! My family loved them. I used fresh lemons but these would be just as good with bottled juice I'm sure.

Amanda must have missed something. Did you forget the 4 eggs or use a tsp instead of TBL maybe?? I have made these bars 100 times no fail. Mine always have a nice thick tart lemony center. Always a hit with my friends, family and co-workers. Everyone requests me to bring them. You did something wrong.
