If I had to choose a "signature" recipe, this would be it. I've been making these since I was a teenager... because they're simply the softest, best-tasting peanut butter cookies I've ever had!

Notes from the Test Kitchen:
This is a great soft peanut butter cookie!  My husband’s comment was that the peanut butter taste was not so overwhelming as most cookies of this type... very nice. 

Ingredients

1/2 c
margarine, light
1/2 c
peanut butter, creamy
1/2 c
sugar (plus additional for rolling cookies in before baking)
1/2 c
brown sugar
1
egg
1/2 tsp
vanilla extract, pure
1 1/4 c
flour
3/4 tsp
baking soda
1/4 tsp
salt

Directions Step-By-Step

Preheat oven to 375 degrees F.

Combine margarine, peanut butter, sugars, egg and vanilla.

In a separate bowl sift together dry ingredients and add to wet mixture.

Form into small balls, roll in remaining sugar and flatten with a fork... creating a criss-cross design.

Bake 10-12 minutes until practically perfect.

Note: You can substitute butter for the margarine, but I actually prefer the reduced-fat margarine in this recipe. Also, be careful not to over-bake. These cookies are best when they're a little under-done.

Yes JoEllen one never knows. If it wasn't for Laura Scudders I'd be grinding my own peanuts with iodize sea salt.. if your read ingredients in ALL other peanut butter they're full of junk, unhealthy stuff, ugh.

I will try these too. I use only butter and Laura Scudders peanut butter as well. You never know what is in processed foods most of the time

These are the best PB Cookies ever!! I add peanuts to mine, and only use REAL butter and All natural peanut butter by Laura Schudders, no hydrogenated oils ONLY Peanuts and Salt, as should be (*:*) If you want to keep healthy only USE REAL BUTTER, our bodies don't recognize Unnatural foods, causes inflammation!

I just pulled the second tray from the oven (it makes just shy of two) and these are SO good!! The inside is soft and the outside has just enough crunch to give it a great texture. I ended up baking them for about 6 & 1/2 minutes (my oven runs hot) and they we're perfect! The only thing I did differently was added in 1/2 tsp cinnamon since my husband is on a cinnamon kick.
