Ingredients For lemon poppy seed granola bars

  • 1/2 c
    coconut oil (measured solid)
  • 1/2 c
    honey
  • 1
    3 ounce package instant lemon pudding mix
  • 2 c
    old fashioned oats
  • 1/3 c
    almonds
  • 1/2 Tbsp
    poppy seeds
  • 1/2 c
    powdered sugar
  • 2 Tbsp
    milk
  • zest from one lemon

How To Make lemon poppy seed granola bars

    Preheat oven to 325. In a medium size mixing bowl combine the coconut oil and honey microwave for 30 seconds at a time until coconut oil is totally melted. Add lemon mix to honey and oil and stir well. Add in oats, almonds, and poppy seeds, stir until everything is covered with the lemon mixture.

    Grab an 8x8 baking pan, line with foil and spray with cooking spray. Scrape granola mixture into pan, press granola lightly into pan. Bake 20-25 minutes until mixture has set. Be careful not to overcook. Remember the oats will get more firm as they cool.

    To make the glaze: Mix powdered sugar, and milk until a glaze forms. Add in the lemon zest and stir well. Wait until bars are totally cool, slice into bars. Drizzle or dunk the bars into the lemon glaze. Store in an airtight container, enjoy!
