Ingredients For lemon meltaways

  • FOR THE COOKIES
  • 3/4 c
    butter, softened
  • 1/3 c
    powdered sugar
  • 1 tsp
    lemon juice
  • 1 1/4 c
    all purpose flour
  • 1/2 c
    cornstarch
  • FOR THE FROSTING
  • 1/4 c
    butter, softened
  • 3/4 c
    powdered sugar
  • 1 tsp
    lemon juice
  • 1 tsp
    grated lemon peel
  • 1-3
    drops yellow food coloring, optional

How To Make lemon meltaways

    In a large bowl, cream butter and powdered sugar until light and fluffy; beat in lemon juice. Combine flour and cornstarch; gradually add to the creamed mixture and mix well. Shape into two 8 inch rolls; wrap each roll in plastic wrap. Refrigerate for 2 hours or until firm.

    Unwrap and cut into 1/4-inch slices. Place 2 inches apart on ungreased baking sheets. Bake at 350F for 8-12 minutes or until the cookies are firm to the touch. Remove to wire racks to cool completely. For frosting, in a small bowl, beat the butter and powdered sugar until smooth. Stir in the lemon juice, lemon peel, and food coloring. Frost cooled cookies.
