Ingredients For lemon icebox cookies

3/4 csugar, divided

3/4 cbrown sugar, packed

1 cbutter, softened

1 1/2 tspvanilla

1egg, beaten
-
1egg, separated

3 call purpose flour

1 1/2 tspbaking powder

3/4 tspsalt
-
2 Tbsplemon juice
-
1 Tbsplemon zest
-
3/4 cfinely chopped nuts

optional: lemon frosting
How To Make lemon icebox cookies

1Combine 1/2 cup sugar, brown sugar, butter, vanilla, egg, and egg yolk; blend well. Add flour, baking powder, salt, lemon juice, and zest; mix well. Shape dough into two 1 1/2 inch thick rolls; wrap in wax paper. Refrigerate for one hour, or until firm. Combine nuts and remaining sugar in a small bowl. Slightly beat egg white. Brush dough with egg white; roll in nut mixture, pressing in nuts firmly. Slice dough 1/4 inch thick.

2Place slices one inch apart on greased baking sheets. Bake at 400F for 5-7 minutes, or until lightly golden. Immediately remove to wire racks. Decorate with frosting, if desired.
