Ingredients For lemon icebox cookies

  • 3/4 c
    sugar, divided
  • 3/4 c
    brown sugar, packed
  • 1 c
    butter, softened
  • 1 1/2 tsp
    vanilla
  • 1
    egg, beaten
  • 1
    egg, separated
  • 3 c
    all purpose flour
  • 1 1/2 tsp
    baking powder
  • 3/4 tsp
    salt
  • 2 Tbsp
    lemon juice
  • 1 Tbsp
    lemon zest
  • 3/4 c
    finely chopped nuts
  • optional: lemon frosting

How To Make lemon icebox cookies

    Combine 1/2 cup sugar, brown sugar, butter, vanilla, egg, and egg yolk; blend well. Add flour, baking powder, salt, lemon juice, and zest; mix well. Shape dough into two 1 1/2 inch thick rolls; wrap in wax paper. Refrigerate for one hour, or until firm. Combine nuts and remaining sugar in a small bowl. Slightly beat egg white. Brush dough with egg white; roll in nut mixture, pressing in nuts firmly. Slice dough 1/4 inch thick.

    Place slices one inch apart on greased baking sheets. Bake at 400F for 5-7 minutes, or until lightly golden. Immediately remove to wire racks. Decorate with frosting, if desired.
