Need cookies for a large crowd?? This is a commercail recipe, this recipe makes 2 cookies per person,@ 2" size. Serves 100 persons. This recipe came from My Step-Dads Military days, and is a military Recipe from when he was in the Marine Corp. Its a family recipe. This is printed in his memory, for Don B. Jones. Ingredients For lemon cookies for 100 by freda
- LEMON, ORANGE, OR VANILLA COOKIES FOR 100 @ 2 PER PERSON

18 lgwhole eggs

1 Qtshortening
-
3 1/2 Cupsbutter or margarine

2-3 TBSlemon flavoring

1 3/4 Qtssugar

5 1/2 Qtsflour sifted

1 1/2 Tbssalt
-
3 1/3 tspbaking soda
- USE THE FOLLOWING FOR ROLLING COOKIES IN;

1 1/2 cupssifted powdered sugar
How To Make lemon cookies for 100 by freda

1Pan size: 18X26 (makes 8 pans) @ 2 cookies each Bake @ 375 12-14 min. Preheat Oven. TIP: (This is a Commercial recipe) Must have a very Large Commercial mixer, or Cut recipe in 1/2 & make 2 batches. -
2Place all ingredients in mixer in order listed. Using Mixer at Low speed, Mis for 1-2 minutes, or til batter is smooth. Scrape down sides of bowl during mixing.

3Divide Dough into 10 portions. Form into Rolls 2" thick and roll into Powdered sugar.

4Slice each roll into 20 pieces. Dip tops into powdered sugar, then place in rows, 4 X 6 on greased baking pans. (do not flatten these cookies.) Bake 12-14 min. Loosen from pan while warm, & remove from pan to cool. TIP: For Orange Cookioes; you can omit the Lemon flavoring and add ORANGE Flavoring in its place along with 1 oz grated orange rind. Tip 2: For Vanilla Cookies; Omit Lemon flavoring and use 2 TBS Vanilla extract flavoring
