Lemon Blossom Cookies
Use preserves of your choice..I like Apricot..Yum!

- 2 c
- margarine or butter, softened..i use butter
- 1 1/2 c
- confectioners' sugar
- 1/4 c
- lemon juice concentrate
- 4 c
- unsifted flour
- finely chopped nuts, assorted preserves
Add lemon juice; beat well. Gradually add flour; mix well.
Chill 2 hours.
Press thumb in center of each ball; fill with preserves.
