MISSOURI: Munch your way across the USA. Donna G, the state of Missouri is now represented. This recipe is from "Capitol Cookies" with recipes from every state & Washington, DC. This recipe was submitted by Footwear Distributing Co, Centertown, Missouri, Wilma Distler, Chairperson. Donna, if you make these, let me know if they make your state proud. NOTE: I have typed the recipe as fully stated in this cookie cookbook. I have no idea how many cookies this makes but it's got to be a lot. I have not made these cookies myself. I'm sure that JoSele Swopes can answer any questions you have about this recipe since it is a German recipe.

Ingredients For missouri's lebkucker (lepe) cookies

  • 1 qt
    molasses
  • 1 c
    butter, do not substitute
  • 1 c
    buttermilk
  • 4 tsp
    baking soda
  • 2 c
    brown sugar
  • 1 qt
    walnut pieces
  • 1 lb
    mixed candied cherries
  • 1 c
    candied lemon peel
  • 1 c
    candied orange peel
  • 1 tsp
    nutmeg
  • 1 tsp
    salt
  • 4 tsp
    cinnamon
  • 1/4 tsp
    black pepper
  • 2 tsp
    vanilla extract
  • 3
    eggs, beaten
  • 1 qt
    whole pecans
  • 1 lb
    raisins
  • 1 pt
    green candied cherries
  • 1 pt
    red candied cherries
  • 1 lb
    chopped dates
  • 1 lb
    mixed candied fruit
  • 3 1/2 qt
    all purpose flour

How To Make missouri's lebkucker (lepe) cookies

    Heat butter & molasses until real thin. Mix baking soda and buttermilk together. Now mix all ingredients together, EXCEPT for flour. Add flour gradually and mix well. Form into rolls and wrap in wax paper. Refrigerate overnight. Slice 1/4" thick & bake on greased cookie sheets at 325 for approximately 15 minutes.

    NOTE: Wilma Distler said this recipe had been handed down from mother to daughter as far back as her great-grandmother. As you can see, this authentic German recipe is chock-full of nuts and candied fruit, but is still easy to put together. Don't let the long list of ingredients throw you!
