Niki's Notes:

These cookies are soooo good!
They taste like an inside out chocolate covered cherry and are really easy to make.
I looked for recipes on the internet, but none of them were exactly what I was looking for so I kinda Frankenstein'ed a recipe together from all the things I read online.
What I was going for was a nice crispy cherry shortbread outside that was soft and chewy on the inside with the kiss in the middle.
The result was almost exactly what I was going for except the outside is a bit less crispy than I'd like, but it is still amazing.

Directions

1
Cream the butter and sugar(s) together.
Add the vanilla and mix well.
Stir in the flour, walnuts, cherries and juice til well combined.
Dough will be a bit stiff at first, you can knead it by hand if it's easier for you.
2
When dough is well combined, roll out a 1 inch ball, flatten it in your palm and wrap it around a Hershey's kiss.
Continue this process 'til all the dough is used.
Bake on an ungreased cookie sheet in a 375 degree oven for 12-14 minutes.
3
Cool on the cookie sheet for about 5 minutes before transferring them to a plate or cooling rack.
Enjoy!
