It's always good to have these made up in the refrigerator for those unexpected visits from the Grandkids

Ingredients

  • 3 1/2 cups sifted all purpose flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 cup butter (or margarine)
  • 3/4 cup karo syrup (light or dark)
  • 1/2 cup sugar (granulated or brown)

How To Make icebox cookies

  • Step 1
    Sift together flour, salt, and soda.
  • Step 2
    Beat butter until soft and creamy. Add syrup and sugar. Add sifted dry ingredients and mix thoroughly with hands until stiff dough is formed.
  • Step 3
    Shape into 3 rolls. Wrap in waxed paper, chill in refrigerator 3 or 4 hours until firm enough to slice.
  • Step 4
    Slice 1/8 inch thick. Place on greased cookie sheet. Bake in a hot oven (400 F) for 10 minutes
  • Step 5
    Variation: COCONUT: add 1 cup after sugar. SPICE: add 1 teaspoon each cinnamon, cloces, allspice, nutmeg and sift with dry ingredients. FRUIT AND SPICE: combine spices and chopped fruit. RAISIN AND SPICE: combine spices and 1 cup raisins.
