Not sure how healthy they are but they do have carrots in them so how bad can they be LOL ..this is a web photo of carrot cake cookies but they look like mine - I was digi cam-less for a while

1/2 choney

1 tsppure vanilla extract

1/2 tsplemon extract

2 csifted all purpose flour

2 tspbaking powder

1/2 tspsalt

1 1/4 cgrated carrots
How To Make honey carrot cookies

11. Cream together butter and honey. Add eggs, and beat well. Blend in vanilla, and lemon extracts.

22. In a separate bowl, sift together the flour, baking powder and salt. Gradually add the dry ingredients to creamed mixture, and mix well. Stir in carrots.

33. Drop by teaspoon on greased baking sheets. Bake at 375 degrees F (190 degrees C) for 15 minutes and cool on racks.
