Ingredients

1-3/4 c
all purpose flour
1/2 tsp
baking soda
1/4 c
unsweetened applesauce
3 Tbsp
butter, room temp.
1/2 c
packed light brown sugar
1/2 c
reduced-fat smooth peanut butter
1/4 c
egg beaters
1/2 tsp
vanilla
1/3 c
plus 3 tbsp honey roasted peanuts, chopped

Step-By-Step

1Heat oven to 350. Lay parchment paper onto 2 cookie sheets. In bowl, combine flour and baking soda.

2In bowl, w/ mixer on medium,beat applesauce and butter until combined. Beat in brown sugar until creamy. Beat in peanut butter, egg beaters and vanilla until combined.

3Beat in flour mix, then beat in 1/3 cup peanuts. Drop by tbsp-fulls 3"-apart onto baking sheets. Flatten into 2" rounds. Sprinkle dough w/ 3 tbsp peanuts, pressing into dough. Bake 8 mins, or until lightly browned
