These cookies are another very old recipe, probably Dutch/New Amsterdam or Hudson Valley Dutch As my Great grandmother Pearls ancestry was Dutch.She said that her relatives used to belong to the dutch reformed church and go wearing big round black hats. Cream Brown sugar, shortening, eggs. Add flour gradually to sugar, shortening and egg mixture. add cinnamon and baking soda. roll out on lightly floured board and cut with a doughnut cutter without the hole. Grease lightly a cookie sheet and put bottoms on greased pan. put a small amount of filling on bottom cookie round and add a whole top and crimp edges shut. make a small steam hole on top of each cookie in the middle and bake 10-12 minutes * don't overcook as it will make them hard.
