  • 1 c
    butter, softened
  • 3/4 c
    granulated sugar
  • 3/4 c
    brown sugar
  • 8 oz
    cream cheese, softened
  • 1 tsp
    vanilla
  • 1
    egg
  • 2 c
    flour
  • 1/4 c
    funfetti cake mix
  • 1 tsp
    baking soda
  • 1 tsp
    salt
  • 2 c
    white chocolate chips
  • 1/2 c
    sprinkles
  • optional: 1/2 cup sprinkles for rolling

How To Make funfetti cheesecake cookies

    Beat together the butter and cream cheese. Mix in the brown sugar and sugar and the vanilla. Mix in the egg. Dissolve the baking soda in 1 tbsp of hot water, then add to the mixture with the flour, cake mix, and salt. Mix just until dough forms. Use a large wooden spoon to mix in the white chocolate chips and sprinkles.

    Cover and chill for 30 minutes. Preheat oven to 350ºF. Scoop by rounded tablespoons and roll into a ball before placing onto parchment or silicone-lined baking sheet, 2 inches apart. If desired, roll (or dip) each cookie dough ball in sprinkles before placing on sheet. Bake for 10 minutes.
