Ingredients For fudgy oatmeal bars

  • 2 c
    brown sugar, packed
  • 1 c
    unsalted butter, softened
  • 1 tsp
    vanilla
  • 2
    eggs
  • 2 1/2 c
    all-purpose flour
  • 1 tsp
    baking soda
  • 1/2 tsp
    salt
  • 3 c
    quick cooking (or regular) oats
  • 2 Tbsp
    unsalted butter
  • 14 oz
    sweetened condensed milk
  • 12 oz
    semi-sweet chocolate chips
  • 1 c
    toasted pecans, chopped (or nuts of your choice)
  • 1 tsp
    vanilla
  • 1/2 tsp
    salt

How To Make fudgy oatmeal bars

    Heat oven to 350 degrees.

    Mix brown sugar, 1 cup butter, 1 teasoon vanilla, and the eggs.

    Stir in flour, baking soda and 1/2 teaspoon salt; stir in oats.

    Reserve 1/3 of the oat mixture.

    Press remaining oat mixture in a greased jelly roll pan, 15 1/2×10 1/2×1 inch.

    Heat 2 tablespoons butter, the milk and chocolate chips over low heat, stirring constantly, until chocolate is melted; remove from heat.

    Stir in nuts, 1 teaspoon vanilla and 1/2 teaspoon salt to chocolate mixture.

    Spread chocolate mixture over oat mixture in pan.

    Drop reserved oat mixture by rounded teaspoonfuls onto chocolate mixture.

    Bake unitl golden brown, 25 to 30 minutes. Cut bars into about 2×1 inch, while warm. 70 bars; 135 calories per bar. *If using self-rising flour, omit baking soda and 1/2 teaspoon salt.
